Fruits
Coconut - Coconut is high in saturated fat and is a good source of
potassium. Coconut milk and coconut cream are sometimes called for in recipes,
particularly in curried dishes. Coconut milk is made by combining equal parts
water and shredded fresh or desiccated coconut meat and simmering until foamy.
The mixture is then strained through CHEESECLOTH, squeezing as much of the
liquid as possible from the coconut meat. The coconut meat can be combined with
water again for a second, diluted batch of coconut milk. Coconut cream is made
in the same manner, but enriches the mix by using 1 part water to 4 parts
coconut. Milk can be substituted for water for an even richer result. Discard
the coconut meat after making these mixtures. Coconut milk and cream also come
canned and may sometimes be found frozen in Asian markets and some supermarkets.
Do not confuse sweetened "cream of coconut"-used mainly for desserts and mixed
drinks-with unsweetened coconut milk or cream.
Longan - Also called "dragon's eye," the longan is a fruit native to
Southeast Asia. The fresh fruit has a translucent, white flesh with a sweet,
floral fragrance. The dried product is black or brownish, leathery and smoky in
flavor and is mainly used to prepare an infusion drunk for refreshment. Eat
longans alone as a snack, or use for soups, desserts, and sweet-and-sour dishes.
Longan contains several vitamins and minerals, including iron, magnesium,
phosphorus and potassium, and large amounts of vitamins A and C. In traditional
Chinese medicine, longan is considered to have a sweet taste and warm energy,
and is associated with the Heart and Spleen meridians. It is used to relieve
rapid heartbeat, insomnia, forgetfulness and anxiety associated with blood and
qi deficiency. Combined with other herbs such as ganoderma and spirit poria,
longan promotes tranquility and calms the spirit. It also increases physical
stamina.
Lychee - One of China's cherished fruits, the lychee's creamy white flesh
is juicy, smooth, and delicately sweet.
Rambutan - The rambutan is a medium sized tree producing a red or yellow
fruit round to oval in shape with hairs or tubercles on its skin. The flesh or
aril is translucent and sweet. Most rambutan trees propagated from seed is not
true-to-type and usually sour. Male rambutan trees are also not uncommon. The
rambutan has a small crop in June - July and a heavy crop in November to
January. Selected clones produce thick, firm flesh which are sweet.Rambutan is
indigenous to the Malay Archipelago and has been widely cultivated throughout
the region in Thailand, South Vietnam, Indonesia, the Philippines, India and Sri
Lanka. In Malaysia is rambutan cultivated in almost all part of the contry but
is concentrated mainly the states of Perak, Pahang, Kedah, Kelantan, Johor dan
Terengganu. The rambutan is well adapted to the tropical and humid climate. A
warm climate is ideal for its growth and high yield. It is suitable for most
types of soil, except the waterlogged and peat areas. However, rambutan requires
a lot of moisture and is not suitable in the hilly terrain. It does not perform
well on sandy areas. Deep alluvial soil and those which contain high organic
matter is ideal for its growth and development. These soils should be well
drained. Soils which have a high water table is not favourable.
Pineapple - The pineapple is native to Central and South America, where a
symbolic representation of it’s from were found in pre-Incan ruins. However, now
Hawaii is leading producer of this fruit. Hawaii has never seen its first
pineapple until the late 1700s. For the centuries pineapple has been used to
symbolize hospitality.While choosing a fresh pineapple one should not judge it
from only its color. There are several varieties in the market which range from
green to golden yellow. According to experts the most useful factor in
determination is smell. We should allow our noise to choose the best pineapple
for us. Ripe pineapples give off a sweet and fresh smell. We should avoid
pineapples with unpleasant odor or have any soft spot or area of darkness.
Always preserve pineapple at room temperature.
